We were first introduced to the SCD diet when our nephew Isaiah began following it 8 years ago. We learned to make legal desserts for him on holidays with the help of our sister Pam. She gave us the recipes to follow and helped us grasp the basics of SCD cooking. While were becoming aware of what SCD does for the body we were unaware of how it was going to save our grandson Brenden.
Brenden was diagnosed with developmental delays last year. Thankfully the knowledge we got from baking for Isaiah gave us a jumpstart in helping with Brenden. Brenden was put on the diet immediately. We wanted to get his digestive system back on track. Boy, what a difference there is in cooking the occasional holiday dessert to making the Specific Carbohydrate Diet your daily diet.
We researched. We studied. We learned what was “LEGAL / ILLEGAL”. We experimented in the kitchen, ALOT. During this period of trial and errors we came up with some really great recipes. While we were creating our recipes we would get more and more requests for our SCD food, before we knew it our business was born! We named it Back on Tract because like Brenden we want to help everyone get back on track.
From the beginning it was our mission to try to create food for Brenden which was reminiscent of his favorite foods. The challenge of taking the legal food list and creating foods which were close in taste and texture to his favorites has been an interesting journey. It has all been worth it. When we hear Brenden call our names or ask for something new our hearts melt. Brenden is still eating the SCD diet and everyday he never stops amazing us.
We have found great pleasure in helping him succeed and want to help others succeed without sacrificing all of their favorite foods. We hope you enjoy eating them as we do making them for you.
